Go green this Pancake Day by adding VitaMatcha to your pancakes. VitaMatcha is made from powdered green tea leaves and contains a huge amount of health benefits: the whole green tea plant is consumed rather than the common watered-down extract. To put simply, two grams of VitaMatcha per day is equivalent to 20 cups of green tea per day in terms of nutritional value and antioxidant content! Furthermore, VitaMatcha has: 70 times the antioxidants of orange juice; 200 times the antioxidants of apple juice; 10 times the polyphenols and antioxidants of other teas; seven times that of dark chocolate; 17 times that of wild blueberries; nine times the beta-carotene of spinach. Oh did I mention that this ‘super’ tea is also calorie free!

Traditionally, Matcha tea is whisked into hot water, feel free to experiment and add to recipes such as this delicious pancake recipe. Be versatile and add to (almond, oat, coconut) milk, fruit juice and smoothies.


40 g coconut flour

1 tbsp VitaMatcha

¼ tsp baking powder

6 egg whites

125 ml buttermilk

1 tbsp honey (or maple syrup or agave nectar)IMG_2283


Combine all ingredients in a small food processor or blender until well combined.

Coat a non-stick pan with cooking spray over a medium-high heat.

When pan is hot enough, slowly ladle the pancake mix into the pan cook until the top is covered in bubble.

Very delicately flip the pancake and cook until the second side is golden.

Garnish with whatever you fancy, but we suggest a dollop of Greek yoghurt, fresh fruit & drizzled with honey.
