Award –winning pub The Three Compasses, in Dalston – a firm favourite amongst local creatives and young professionals for its relaxed environment and ever rotating menu, has opened its kitchen to CLAW – crab specialist and providers of bespoke crab dishes. Founded by Fabian Clark; winner of Virgin’s coveted Foodpreneur 2015 award, CLAW’s primary aim of bringing the fresh taste of the Devon coast to London has been achieved via a mouthwatering menu featuring five burgers (from £9.50 -£11) all served in an organic brioche bun accompanied with salted tarragon fries.

The Samphire: Devonshire hand –picked crab, iceberg lettuce, samphire and CLAW sauce; The Kimchi: Devonshire hand –picked crab, iceberg lettuce, kimchi and siriacha remoulade.

Non –crab options are also available:

The Shrimp: freshwater shrimps, fried capers, iceberg lettuce and tartare sauce; The Octopus: Newlyn barbecued octopus, pickled cucumber, smoky BBQ sauce and coriander.

Vegetarians are also catered for with the self –explanatory Veggie: mixed beans, cumin, iceberg lettuce and masala mayonnaise.image

CLAW will be making its brunch debut at The Three Compasses served from 11 am -4 pm every weekend throughout the residency. Dishes include a Lobster BLT (£9); Crab grilled cheese with chilli and coriander (£7); Smoked pancetta sourdough sandwich (£5.50); and Black pudding hash with smoked lardon, cauliflower purée, potatoes and a fried egg (£10).

In addition to fresh sustainable sourced crab from Start Bay in Devon, expect freshly baked bread from Celtic Bakery, cheese sourced from Neal’s Yard Dairy and the best vegetables courtesy of Borough Market.

CLAW have also teamed up with East London Liquor Company to create delicious paired cocktails, including a Bloody Mary: Guinness, oyster sauce and CLAW’s secret sauce; and a hickory-salted Negroni.
