Almonds 100g

Amaretto cookies 50g

Potato Flour 120g

Carrots 150g

Sugar 100g

3 medium size eggs

1 tsp of ground cinnamon

Baking soda 8g


1. Grate the carrots  – wash and peel before

2. Grate the almonds into thin layers

3. Crush the amaretto cookies into a powder

4. Work the eggs yolks with the sugar until is foamy and light in colour

5. Add all the ingredients together in a mixing bowl – except for the egg


6. Whip the egg whites until you have nice and stiff peaks

7. Fold the egg whites with the rest of the ingredients

8. Line cake tin with parchment paper, bake at 170c between 20 and 25 minutes
